The only "untained" copy of star wars that really exists is in Disney's vaults. They have a 4k remaster they won't release to the public. There is no canonical version of Star Wars according to nerds. Lucas supposedly sent out copies in '77 with different scenes that were later cut during wide release. Episode I still looks fantastic to this day. Even the sections with dated CGI are done in a way that you won't notice after a minute, specifically the gungun / droid battle. Episode II looks like shit because they did everything they did in Episode I except instead of using film, they went all digital. I think Episode II is a 2k film.
